- 1 dozen oysters
- 1/2 stick of butter
- 2 tbsp. olive oil
- 1 cup flour
- creole seasoning
- coarse sea salt, as needed
- Frying oysters is quite easy but they have to be cooked very quickly or they will get hard and inedible. In a skillet over medium high heat melt your butter with your olive oil.
- Crack your eggs into a small mixing bowl and then add your seasoning. Whisk well. Add your oysters to the bowl. Let them sit in the egg mixture for a few minutes.
- Pour your flour on a paper plate and add the oysters. Shake off the excess flour before dropping them in the hot oil. Make sure the oil is hot but not smoking! Fry, turning once, just for about 2 - 3 minutes. Place cooked oysters on paper towels to drain and then place in platter. Add your coarse sea salt. Serve with lemon, cocktail sauce, and/or tabasco sauce.
